Avocado Tuna Salad

Healthy and easy! Avocado Tuna Salad with avocado, canned tuna, red onion, celery, and NO mayo.
Ingredients

Main Course
  • 1 5-ounce can tuna, preferably packed in olive oil, drained
  • 1/2 ripe avocado, roughly chopped
  • 1/2 cup minced celery
  • 1/4 cup minced red onion
  • 1 Tbsp olive oil
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • 2 Tbsp chopped fresh cilantro or parsley
  • 1/2 teaspoon kosher salt
  • Freshly ground black pepper

Optional base flavorings:
  • Mint leaves (1 bunch, stems removed, chopped, about 1 cup)
  • Cinnamon and cardamon (1 cinnamon stick, 2 cardamom pods)
  • Amaretto (1-2 tablespoons)
  • Almond extract (1 teaspoon)
Directions
  • Place all of the ingredients in a medium bowl. Mix with a fork, mashing the avocado and breaking up the chunks of tuna as you go, until the ingredients are well combined. Add more oil or salt and pepper if necessary, serve on your favorite sandwich bread or toast.
